Remove the stems of purple eggplant, wash and set aside. -

Fry purple eggplants over low heat. I use a thicker cast iron pan without adding oil. It is best to use a non-stick pan. When frying, use a spatula to lightly press the eggplant slices. Cook the surface of the eggplant until it reaches the degree of rareness you like. If you like the eggplant soft, bake it for a while. If you like the eggplant to be cooked, bake it for a while. -

Turn over and bake until both sides are golden brown. -

Pound the minced garlic and set aside. -
