Ingredients (5)
- 2 tbsp extra virgin olive oil
- 3 large brown onions, halved, thinly sliced
- 1/3 cup brown sugar
- 1/4 cup red wine vinegar
- 2 tsp fresh thyme leaves
Method
- Step 1 Heat oil in a large frying pan over medium-low heat. Add onion. Cook, stirring occasionally, for 15 minutes or until onion is softened but not browned.
- Step 2 Add sugar, vinegar and thyme. Cook, stirring occasionally, for 10 to 15 minutes or until mixture thickens and caramelises. Set aside to cool completely. Serve.
